What is the chance of a package thief coming and taking any shipments at your house? It seems to be a common thing, have your packages ever been stolen?

My former neighbors reported seedy activity but thankfully no packages were stolen.

Would a video camera be enough if you want to defend against it?

Better than nothing. Try to place the camera in a direction into which the suspect looks (approximately), but conceal it so he won't immediately see it and hide, so you'll have good capture of his face

Here nearly no at all, because if the postman does not "catch" anyone at home, he just pot a notification in the mailbox and return the package to the post office...

The problem here is that there are 2 spots where packages can be delivered, and I only have 1 video camera.

Cheap webcam is sufficient under good lighting conditions. Wire it to a computer inside the house

I'll just keep the camera in one place.

I don't have enough time to do that right now. And the camera will be pointing through the door, so any thieves will quickly see the camera.

Breaking News: The mailman is getting lazy! 1. Didn't notice the camera. 2. Forgot a package, then remembered a little later. 3. Dropped the package on the ground. But no thieves.

Disguise or hide the camera somehow

But isn't it good to show the thieves the camera? It might scare them away if they know of the videos showing package thieves.

Your choice. Based also on the type of thieves over there
For example if it is some stupid kids, best would be to let them steal not knowing that there is camera, then go with the footage to their parents. This would hopefully give them a good shake down, and stop them from stealing. Hopefully before they get caught by somebody else who would call the cops and not their parents
