Not sure which one would be considered the rarest but here's three rare ones I've seen in person:
-LM Unistyle 1000 -Revere Urban-Lite -GE M-250R Crimefighter -Westinghouse HMA-60 -Westinghouse OV-20, pendant mounted version

For me it’s between the GE form 402 and Westinghouse HMA-60. Both of these clamshells had a very short run time in the 1950s, and are still lit with 1kW MV.

Diehard MV, HPS, SOX & Preheat Fluorescent Fanatic

For me, it's a 250w MV Roadster and a 250w MV Optispan on the same pole. 2 very rare lights but seeing them on the same pole and still in use as of 2022 is amazing when you consider that the lights are still very well maintained and just a few meters away in the same car park is another 2 arm pole with 2 MV Optispecs but best of all, they are only about 15 minutes away from my house. I still need to get some photos of this rare sight and upload them to LG. Also have to give a shoutout to the GE M250R installed at a nearby shopping mall. Seeing any cobrahead in Australia is rare enough but the GE M250R is an amazing fixture to see installed in Australia considering they were once everywhere in the US and Canada. Sadly it doesn't work and hasn't worked for over 10 years.

When saving lights Ive heard you can just walk up to the construction guys doing the replacing and ask for it there and then. They may be gone now.

@Radiant: they are being spot replaced, Surprisingly I sent the management an email of interest and they said they would ask the owners of the mall about it. Apparently they have saved the old ones they have already taken down!  I'm not going to get my hopes too high, but I have a slim chance of saving these.  If I get them I'll try and save some for other collectors, they weigh 70 pounds and I cant keep them all.
